Just in time for Thanksgiving, Chef Charlie Palmer leads a hands-on master class on the holiday bird at Appellation Healdsburg. Limited to ten guests, the class covers brining for flavor, breaking down a whole turkey, trussing and roasting it to a caramelized finish, with every guest working through each step. Winemaker Tom Rochioli pours alongside, pairing the turkey with the wine he serves at his own Thanksgiving table. Guests leave ready to host the holiday with confidence.
